Cafe NOLA has taken the region by storm with its authentic New Orleans cuisine and Cajun specialties including po' boys, etouffee, jambalaya, dirty rice, gumbo and of course beignets. It’s a breath of fresh air for the Capital District and a very welcome one!

The true art of Cajun cooking is not an easy one, but it’s one that Cafe NOLA has mastered; carefully blending herbs and spices to enhance the flavor of the meat, poultry seafood and wild game. The alligator bites (you can’t go Cajun without trying some ‘gator!) are seasoned to perfection, and the crawfish etouffee (you can also have chicken, catfish or ‘gator versions) has a rich depth of flavor thanks to plenty of andouille sausage and wonderful spices. Just make sure you leave room for the heavenly beignets – each liberally dusted with powdered sugar and served with chocolate ganache, bourbon caramel and raspberry sauces.
